Need a recipe for apricots??
I made an Apricot Crisp yesterday for dessert and it was tuely a hit!!! Apricots will continue to ripen on the counter and bruise extremely easy. Keep in the refridgerator for longer storage. If you still have your apricots and need to do something with them...try this recipe.
Apricot Crisp
6 apricots, seeded and cut into quarters
1 Tbp cornstarch
1/4 cup sugar
1/2 cup butter, softened
2 cups oatmeal
2/3 cup flour
1 cup brown sugar
1/2 tsp salt
1/2 cup pecans
Gently combine apricots with cornstarch and 1/4 cup sugar. Place into an 8x8 pan. Cut the butter into the flour and then add the rest of the ingredients. Bake at 350* for about 30 mins or until golden brown and bubbly. Let rest a bit and serve straight or with a small scoop of vanilla ice cream! It sweetness yet tanginess from the aprcots make it a lovery dessert for the end of summer. Enjoy!!
