Chocolate Zucchini Bread Recipe

Do you all still have zucchini left from your bags? Here's a good recipe if you've got a sweet tooth. I try to use as much organic ingredients as possible and I normally cut the sugar back by 1 it on most things...and it still came out fine. However you may want to try it once first the way it calls and maybe later make adjustments.

Chocolate Zucchini Bread

4 eggs, beaten
3 c. sugar
1 c. canola oil
3 1/2 Tbsp. good cocoa powder
1 tsp. salt
3 c. flour
1 1/2 tsp baking powder
1 tsp. baking soda
3 c. grated zucchini(about 2 medium)
1 c. chopped walnuts, optional

Preheat oven to 350*. Blend first 4 ingredients well. In a separate bowl mix dry ingredients. Add to the egg mixture but only mix until just incorporated. Don't over mix. Next fold in zucchini and nuts. Pour into 2 greased and floured bread pans and bake for about 35 to 40 mins, until cake tester comes out clean.

Makes 2 loavesEnjoy!!! If you have any recipes that you'd like to share with the group or want to have us post on the blog, please email it to us. We'd love to have it!!
