Chocolate Zucchini Bread Recipe

Do you all still have zucchini left from your bags? Here's a good recipe if you've got a sweet tooth. I try to use as much organic ingredients as possible and I normally cut the sugar back by 1 cup...do it on most things...and it still came out fine. However you may want to try it once first the way it calls and maybe later make adjustments.

Chocolate Zucchini Bread

4 eggs, beaten
3 c. sugar
1 c. canola oil
3 1/2 Tbsp. good cocoa powder
1 tsp. salt
3 c. flour
1 1/2 tsp baking powder
1 tsp. baking soda
3 c. grated zucchini(about 2 medium)
1 c. chopped walnuts, optional

Preheat oven to 350*. Blend first 4 ingredients well. In a separate bowl mix dry ingredients. Add to the egg mixture but only mix until just incorporated. Don't over mix. Next fold in zucchini and nuts. Pour into 2 greased and floured bread pans and bake for about 35 to 40 mins, until cake tester comes out clean.
