What can I do with this parsley? How about ........
.....delicious Tabbouli Salad
- 1 bunch of fresh parsley finely chopped
- 4 green onions finely chopped
- 2 large tomatoes finely chopped
- 1/4 cup of freshly squeezed lemon juice
- 1 peeled finely diced cucumber
- 4 tablespoons olive oil
- 1 cup bulgur
- 1 cup water , boiled
- 1/4 teaspoon freshly ground green pepper (or black)
- 1/8 teaspoon salt
- 1 pinch of sugar to taste
Mix all the ingredients together and allow to sit in a covered bowl for a few hours in the refrigerator or over night for best results.

Regina's Secret Ingredient Smoothie Recipe
2 Scoops of *Secret Ingredient* Vanilla or Chocolate Protein
Shake (*20 vitamins and minerals)
1 Scoop of *Secret Ingredient* Go Fiber Booster
1 Tablespoon of Honey
½ Cup Lowfat Vanilla Yogurt
1 Cup Milk (Lowfat, Almond, Soy, or 2%) or 1 Cup Apple
Juice
1 Cup Ice (optional)
1 -2 Cups Fruit of Your Choice (Banana, Apple, Grapes,
Blueberries, Mango or Cantaloupe, etc.) - can be mixed
*************************************************
Put all ingredients into a blender. Blend thoroughly.
ENJOY!

Something Special.....Yummy Bread!
Hello Coop Family,
I'm excited to let you know that Jinks, will be offering her breading making classes once again for only $5 pp. The class will be on April 30, 2010 from 11-1 pm.
She plans on teaching "The art of making whole grain bread--milling, mixing/kneading, & baking." You can also expect to assemble and eat a pizza as well as preparing cinnamon rolls.
Seats will fill up super fast so please RSVP soon!

Something Yummy From Kate

Something Gourmet, Something Different
Hola CoOp Family,
During our next distribution we'll be offering different varieties of Gourmet Sea Salts.Below I've listed the types of salts, along with a tiny bit of information, I've collected from various web sites.
Hawaiian Red-is said to be the traditional Hawaiian table salt. "A natural mineral called "Alaea" (volcanic baked red clay) is added to enrich the salt with iron oxide. This natural additive is what gives the salt its distinctive color. The clay imparts a subtle flavor that is said to be mellower than regular sea salt."
Himalayan Pink-is rich in minerals including calcium, magnesium, potassium, copper and iron. This marine fossil salt, it is harvested from the foothills of the Himalayas. It is said to help remove toxins such as heavy metals from the body
Hawaiian Black- has an earthy sweet, subtle flavor. It get's it color from being "bonded with activated charcoal and minerals to achieve its characteristic color and slightly-earthy salt flavor"
Yakima Applewood Smoked Salt- is smoked over applwood which give it a nice sweet and fruity smoked flavorFleur de Sel - is French for Flower of Salt, it's a pricey salt often found in many high end restaurants. This salt is said to brings out the true flavors of other spices used in conjunction with it
Gray Salt-" is a “moist” unrefined sea salt usually found on the coastal areas of France. Its light grey, almost light purple color comes from the clay found in the salt flats. The salt is collected by hand using traditional Celtic methods. Grey Salt has gained great fame in the mainstream culinary world in the last few years and is considered by many to be the best quality salt available"

Easy Ratatouille
Ingredients:
- 2 tablespoons olive oil
- 3 cloves garlic, crushed and minced
- 1 large onion, quartered and thinly sliced
- 1 small eggplant, cubed
- 2 green bell peppers, coarsely chopped
- 4 large tomatoes, coarsely chopped, or 2 cans (14.5 ounces each) diced tomatoes
- 2 to 4 small zucchini, cut into 1/4-inch slices
- 1 teaspoon dried Italian spices
- 1/2 teaspoon sea salt
- 1/4 teaspoon pepper
- 2 tablespoons chopped fresh parsley
